• Could just rsync the files every minute after creating them locally. I actually like this, except we're going to have to write the files locally… and I would rather just write them over the network to a shared drive and be done with it.

This looks really simple, maybe a bit slow… look at the weaker encryption maybe for speed. Or just use CIFS or something simple…
